Not all Sauerkraut is Created Equal

 

Sauerkraut has been around for centuries and has become a staple in many cuisines around the world. This fermented cabbage dish is loved for its tangy flavor, versatility, and nutritional benefits. However, not all sauerkraut is created equal, and it's essential to understand the differences between the various types of sauerkraut available in the market.

 

First and foremost, it's important to understand the fermentation process. Sauerkraut is made by slicing cabbage thinly and adding salt to it, which causes the cabbage to release its natural juices. The right concentration of salt will encourage the growth of beneficial bacteria that help to ferment the cabbage, while inhibiting the growth of harmful bacteria. Over a period of 3-4 weeks, the cabbage is transformed into sauerkraut, which can be eaten as a condiment, side dish, or even as a topping on sandwiches. The final product has many health benefits and it is a natural source of prebiotics and probiotics.

 

However, not all sauerkraut is created equal. Some sauerkraut is made with vinegar or other additives that can alter the flavor and nutritional content. Additionally, some sauerkraut is canned and the heat treatment applied during canning, completely kills the beneficial bacteria, eliminating all the probiotic benefits. The canned and vinegar-based sauerkraut does not need to be refrigerated and it is found at room temperature.

 

Naturally fermented sauerkraut, on the other hand, needs to be refrigerated, as it contains live cultures. Without refrigeration, the fermentation process will continue, and the product will become fizzy and overly active.

 

To choose the best sauerkraut

1.     Choose sauerkraut that is stored in the refrigerated section of the store.

2.     Look for sauerkraut that is made from only cabbage (and other vegetables), salt, and perhaps some spices or seasonings.

3.     Avoid sauerkraut that contains vinegar, sugar, or other additives.

4.     Choose a sauerkraut that has a fully developed flavour without being overly salty.

5.     Look for glass packaging rather than plastic. Being highly acidic, sauerkraut will leach unwanted chemicals when packed in plastic.

 

In addition to being a delicious and healthy food choice, sauerkraut is also a great source of probiotics. These are beneficial bacteria that can help to improve gut health, boost the immune system, and even aid in weight loss.
